In a medium bowl, whisk together the flour, oats, baking powder, salt, and spices. Set aside.

In a separate large bowl, whisk together the eggs and sugar until thick and light in colour.

Add the yogurt, oil, and vanilla, and whisk until combined.

Add the dry ingredients in thirds and whisk in until just combined - do not overmix.

Fold in the apple chunks.

Pour the batter into the prepared pan and spread out evenly. Bake for 50 - 60 minutes, or until a toothpick inserted into the centre comes out clean.
