Deliciously chewy oat bars that are made with an oaty, buttery crumb, and filled with a thick layer of caramel and chocolate chips. The perfect sweet treat!
Preheat the oven to 180C/350F/Gas 4. Line an 8x8-inch square baking pan with foil or parchment paper. Set aside.
Whisk together the flour, oats, sugar, baking soda, and salt. Add the butter and vanilla, and mix in with a fork to form a crumbly mixture.
Press half of the mixture into the base of the prepared pan. Bake for 10 minutes.
For the Filling
Place the caramels and milk in a microwave-safe bowl, and heat in 30 second intervals, stirring after each one, until melted and smooth.
Pour the caramel mixture over the base, spread out evenly, then sprinkle with the chocolate chips. Top with the remaining crumble mixture, patting it down gently.
Bake for 20 - 30 minutes or until golden brown on top. Allow to cool completely in the pan on wire rack before cutting into bars.

Notes
Bars stay fresh, stored in an airtight container, at room temperature or in the fridge for up to 1 week. They also freeze well for up to 3 months. Thaw overnight in the fridge before serving.
