Caramel Oat Bars – Deliciously chewy oat bars that are made with an oaty, buttery crumb, and filled with a thick layer of caramel and chocolate chips. The perfect sweet treat!
Caramel Oat Bars
These Caramel Oat Bars are absolutely incredible.
Let me break them down for you. So, we have the oaty, buttery crumb mixture for the base and top of these bars. Not too thick, and pairs beautifully with the filling.
The filling is a thick layer of soft, chewy caramel that is generously studded with chocolate chips. If that doesn’t sound incredible, then I don’t know what does.
These bars make it hard to stop at just one! If you have a big sweet tooth like me, you are gonna love them.

Ingredients you’ll need
- Plain/all-purpose flour
- Quick oats: You can also use rolled oats if you prefer.
- Light brown sugar
- Baking soda
- Salt
- Unsalted butter
- Vanilla extract
For the caramel filling, you’ll need:
- Chewy caramels or toffees
- Evaporated milk
- Chocolate chips: You can use milk, dark, or semi-sweet.
How to make Caramel Oat Bars
To make these caramel bars, simply start by whisking together the flour, oats, brown sugar, baking soda, and salt.
Add the melted butter and vanilla, and mix in with a fork to form a crumbly mixture.
Press half of the mixture into the base of an 8×8-inch square baking pan lined with parchment paper or foil. Bake for 10 minutes.
For the caramel filling, add the caramels and evaporated milk to a microwave-safe bowl, and heat in 30 second intervals, stirring after each one, until melted and smooth.
Pour the caramel mixture over the oat base, spread out evenly, then sprinkle with the chocolate chips.
Top with the remaining crumble mixture, patting it down gently into the caramel layer.
Bake for 20 – 30 minutes or until golden brown on top. Allow to cool completely in the pan on wire rack before cutting into bars.

NOTE: For best results, I highly recommend using the gram measurements (with a digital scale), rather than the cup measurements.
Cup measurements are simply not accurate enough, and I cannot guarantee the best results if you use them.

How long will these oat bars last? These bars will keep fresh stored in an airtight container at room temperature or in the fridge for up to 1 week.
Can I freeze these caramel oat bars? Yes! They also freeze well for up to 3 months. Thaw overnight in the fridge before serving. If desired, allow the caramel to soften by letting them come to room temperature.

For the Crumble
- 1 cup (125g) plain/all-purpose flour
- 1 cup (90g) quick oats
- 1/2 cup (100g) light brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (115g) unsalted butter, melted
- 1 teaspoon vanilla extract
For the Filling
- 10 oz (280g) chewy caramels or toffees
- 1/4 cup (60ml) evaporated milk
- 1/2 cup (90g) chocolate chips
Instructions
For the Crumble
- Preheat the oven to 180C/350F/Gas 4. Line an 8x8-inch square baking pan with foil or parchment paper. Set aside.
- Whisk together the flour, oats, sugar, baking soda, and salt. Add the butter and vanilla, and mix in with a fork to form a crumbly mixture.
- Press half of the mixture into the base of the prepared pan. Bake for 10 minutes.
