Line an 8x8-inch baking pan with parchment paper or foil, and set aside.
In a microwaveable bowl, add the butter, honey, and brown sugar. Microwave until the butter has melted and the sugar has dissolved. Remove from the microwave, then stir in the vanilla.
In a large bowl, mix together the oats, Rice Krispies, and cinnamon. Add the butter mixture and fold in until fully combined. Use your hands if you need to. Allow the mixture to cool slightly - about 5 minutes.
Fold in 3/4 cup (130g) of the chocolate chips. Don't worry if the chocolate chips melt a little against the warm mixture.
Press the mixture firmly into the prepared pan (use your hands), then press the remaining chocolate chips on top. Cover, and chill for at least 2 - 3 hours before removing and cutting into bars.

Leftovers can be stored in an airtight container in the fridge for up to 2 weeks. They also freeze well for up to 3 months. Thaw overnight in the fridge before eating.
