No-Bake Chocolate Chip Granola Bars – These deliciously chewy NO-BAKE bars are stuffed full of chocolate chips and spiced with a hint of cinnamon!
Today, I bring you these incredibly delicious No-Bake Chocolate Chip Granola Bars!
They are SO chewy, and full of flavour. These bars are stuffed with oats, Rice Krispies, chocolate chips, and a hint of cinnamon. A perfect combination for a delicious, no-bake snack.
How to make No-Bake Chocolate Chip Granola Bars
Ingredients you’ll need:
- unsalted butter
- honey
- light brown sugar
- vanilla extract
- porridge oats
- Rice Krispies
- ground cinnamon
- chocolate chips
To make these no-bake granola bars, simply add the butter, honey, and brown sugar to a microwave-safe bowl, then microwave until the butter has melted and the sugar has dissolved. Remove from the microwave, and stir in the vanilla.
In a separate large bowl, mix together the oats, Rice Krispies, and cinnamon. Add the butter mixture and fold in until fully combined. You may need to use your hands if the mixture is a little too crumbly.
Allow the mixture to cool slightly – about 5 minutes, then fold in 3/4 cup (130g) of the chocolate chips.
Press the mixture firmly into an 8×8-inch baking pan lined with parchment paper or foil, then press the remaining chocolate chips on top. Cover, and refrigerate for at least 2 – 3 hours before cutting into bars.

NOTE: For best results, I highly recommend using the gram measurements (with a digital scale), rather than the cup measurements.
Cup measurements are simply not accurate enough, and I cannot guarantee the best results if you use them.

How long will these no-bake granola bars last? These bars can be stored in an airtight container in the fridge for up to 2 weeks.
Can I freeze these granola bars? Yep! They also freeze well for up to 3 months. Thaw overnight in the fridge before eating.

Ingredients
- 1/4 cup (56g) unsalted butter
- 1/4 cup (90g) honey
- 1/4 cup (50g) light brown sugar
- 1 teaspoon vanilla extract
- 2 cups (200g) porridge oats
- 1 cup (25g) Rice Krispies
- 1/2 teaspoon ground cinnamon
- 1 cup (175g) chocolate chips
Instructions
- Line an 8x8-inch baking pan with parchment paper or foil, and set aside.
- In a microwaveable bowl, add the butter, honey, and brown sugar. Microwave until the butter has melted and the sugar has dissolved. Remove from the microwave, then stir in the vanilla.
- In a large bowl, mix together the oats, Rice Krispies, and cinnamon. Add the butter mixture and fold in until fully combined. Use your hands if you need to. Allow the mixture to cool slightly - about 5 minutes.
- Fold in 3/4 cup (130g) of the chocolate chips. Don't worry if the chocolate chips melt a little against the warm mixture.
- Press the mixture firmly into the prepared pan (use your hands), then press the remaining chocolate chips on top. Cover, and chill for at least 2 - 3 hours before removing and cutting into bars.
Notes
