Line an 8x8-inch square pan with parchment paper, and set aside.
In a large mixing bowl, mix together the peanut butter, icing sugar, melted butter, vanilla, and salt until completely combined.
Drop the peanut butter mixture into the prepared pan, and spread out into an even layer.
For the Chocolate Layer
Add the chocolate and peanut butter to a microwave-safe bowl and heat in 30 second intervals, stirring after each one, until melted and smooth.
Pour the chocolate over the peanut butter layer, and spread out evenly.
Refrigerate for 2 - 4 hours or until the bars are firm and the chocolate topping is set. Once chilled, slice into squares and enjoy!

Notes
Bars stay fresh stored in an airtight container in the fridge for up to 1 week. They also freeze well for up to 3 months. Thaw overnight in the fridge before serving.
