If you’re a fan of blueberry crumble, then you are gonna absolutely LOVE these bars.
These bars are made up of a soft and buttery crumble base and top, and are filled generously with fresh, juicy blueberries.
Serve these warm with some custard for the perfect summer dessert!

Ingredients you’ll need
Here’s a list of ingredients you’ll need to make these bars. You can find my recipe card at the bottom of this post for the complete list with their amounts.
For the Crumble:
- Plain/all-purpose flour
- Baking powder
- Salt
- Unsalted butter: Melted.
- Light brown sugar
- Vanilla extract
For the Blueberry Filling:
- Fresh blueberries
- Caster/granulated sugar
- Cornflour/cornstarch
- Lemon juice
How to make Blueberry Crumble Bars
To make these bars, simply grab a medium mixing bowl and whisk together the flour, baking powder, and salt. Set aside.
In a separate large mixing bowl, whisk together the melted butter, sugar, and vanilla extract.
Add to the dry ingredients and mix in with a fork to form a crumbly mixture.
Press half of the mixture into the base of an 8×8-inch square baking pan lined with foil or parchment paper.
For the filling, add the blueberries to a medium mixing bowl. Mix in the sugar, cornflour, and lemon juice until the blueberries are fully coated.
Pour the blueberries over the base and spread out evenly.
Sprinkle the remaining crumble mixture on top of the blueberries, pressing it down gently.
Bake for 35 – 40 minutes until the top is golden brown. Allow to cool completely in the pan on wire rack before cutting into bars.

NOTE: For best results, I highly recommend using the gram measurements (with a digital scale), rather than the cup measurements.
Cup measurements are simply not accurate enough, and I cannot guarantee the best results if you use them.

How long will these blueberry crumble bars last? These bars will stay fresh, stored in an airtight container, at room temperature or in the fridge for up to 1 week.
Can I freeze these bars? Yes, they also freeze well for up to 3 months. Thaw overnight in the fridge before serving. If desired, warm up for a few seconds in the microwave before serving.

Ingredients
For the Crumble
- 3 cups (375g) plain/all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup (226g) unsalted butter, melted
- 3/4 cup (150g) light brown sugar
- 1 teaspoon vanilla extract
For the Blueberry Filling
- 2 cups (296g) fresh blueberries
- 1/4 cup (50g) caster/granulated sugar
- 1 and 1/2 teaspoons cornflour/cornstarch
- 2 teaspoons lemon juice
Instructions
For the Crumble
- Preheat the oven to 180C/350F/Gas 4. Line an 8x8-inch square baking pan with foil or parchment paper. Set aside.
