I am a big PB&J fan and I love combining the two ingredients in my recipes.

If you love the combination just as much as I do, you are gonna absolutely LOVE these bars.

These bars are deliciously thick, soft, and chewy, bursting with peanut butter flavour, and generously filled with jam centres.

They are super quick and easy to throw together, and you only need simple, staple ingredients!

Ingredients you’ll need

Here’s a list of ingredients you’ll need to make these bars. You can find my recipe card at the bottom of this post for the complete list with their amounts.

  • Plain/all-purpose flour
  • Baking powder
  • Baking soda
  • Salt
  • Unsalted butter: Melted.
  • Light brown sugar
  • Large egg
  • Vanilla extract
  • Smooth peanut butter
  • Seedless raspberry jam: You can use any flavour you like. I microwaved it for a few seconds to make it easier to spread.

How to make Peanut Butter & Jam Bars

To make these bars, simply grab a medium mixing bowl and whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a separate large mixing bowl, whisk together the melted butter and sugar until combined.

Add the egg, vanilla extract, and peanut butter, and mix until combined.

Add the dry ingredients and mix until completely combined.

Press about 2/3 of the dough into the bottom of an 8×8-inch square baking pan lined with parchment paper or foil.

Spread the jam evenly on top, and crumble the remaining dough evenly over the jam.

Bake for 30 – 35 minutes or until golden brown on top. Allow to cool completely in the pan on a wire rack before cutting into bars.

TIP: For a speedy cooling time, place the pan in the freezer for 1 hour, then cut into bars.

NOTE: For best results, I highly recommend using the gram measurements (with a digital scale), rather than the cup measurements.

Cup measurements are simply not accurate enough, and I cannot guarantee the best results if you use them.

How long will the peanut butter bars last? These bars will stay fresh, kept in an airtight container, at room temperature for up to 1 week.

Want freshly-baked bars every time? Cookie dough can be wrapped in clingfilm and kept in the fridge for up to 5 days, or frozen for up to 3 months. Thaw overnight in the fridge before using.

Ingredients

  • 1 and 3/4 cups (218g) plain/all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup (125g) smooth peanut butter
  • 3/4 cup (245g) seedless raspberry jam

Instructions

  1. Preheat the oven to 180C/350F/Gas 4. Line an 8x8-inch square baking pan with foil or parchment paper, and set aside.
  2. Whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate large bowl, whisk together the butter and sugar until combined. Add the egg, vanilla, and peanut butter, and mix until combined.
  4. Add the dry ingredients and mix until completely combined.
  5. Press about 2/3 of the dough into the bottom of the prepared pan. Spread the jam evenly on top. Crumble the remaining dough evenly over the jam.
  6. Bake for 30 - 35 minutes or until golden brown on top. Allow to cool completely in the pan on a wire rack before cutting into bars.

Notes
