Rocky road is a type of no-bake slice consisting of chocolate and marshmallows along with other ingredients, such as biscuit pieces (digestive biscuits or shortbread), nuts, and glacé cherries or raspberries.

It is made by combining the melted chocolate with the other ingredients before refrigerating to set.

The best thing about rocky road is that it is so quick and easy to make, and incredibly versatile. You can choose any add-ins you fancy!

My easy rocky road recipe is a British classic. A combination of milk chocolate and dark chocolate, broken pieces of digestive biscuits, and lots of mini marshmallows.

Ingredients you’ll need

Here’s a list of ingredients you’ll need to make this rocky road. You can find my recipe card at the bottom of this post for the complete list with their amounts.

  • Chocolate: Use a good quality chocolate that you enjoy eating on its own. I used a combination of milk and dark chocolate.
  • Unsalted butter
  • Golden syrup: Or light corn syrup, honey, or agave. This keeps the chocolate velvety smooth and creamy without going rock hard.
  • Biscuits/cookies: I used digestive biscuits, but you can use shortbread or rich tea biscuits.
  • Mini marshmallows: Or regular-sized marshmallows chopped into small pieces.

How to make Rocky Road

To make this delectable treat, simply place the chocolate, butter, and golden syrup into a large microwave-safe bowl.

Heat in 30 second intervals, stirring after each one, until melted and smooth.

Stir in the digestive biscuits and marshmallows until fully coated.

Pour the mixture into an 8×8-inch square baking pan lined with parchment paper and spread out evenly. Refrigerate until set – about 2 – 3 hours, or overnight.

Cut into bars and enjoy!

Can I make rocky road with white chocolate instead?

Yes, white chocolate works too! Use the same amount as stated in the recipe.

What’s the best way to melt chocolate for rocky road?

In the microwave: My favourite method is the microwave. Simply add your chocolate, butter, and golden syrup to a large microwave-safe bowl and heat in 30 seconds intervals, stirring after each one, until melted and smooth.

On the stove-top: Add the chocolate, butter, and golden syrup to a large heat-proof bowl over a saucepan of simmering water (making sure the water is not touching the bowl). Stir until melted and smooth.

How do I cut rocky road?

To get nice, clean cuts, use a heated knife. Hold the knife under running hot water, dry it off, then slice. Repeat after each slice.

Ingredients

  • 7 oz (200g) dark chocolate, coarsely chopped
  • 10.5 oz (300g) milk chocolate, coarsely chopped
  • ¾ cup (170g) unsalted butter, cubed
  • ¼ cup (90g) golden syrup, corn syrup, honey, or agave
  • 200 g digestive biscuits, about 14 biscuits, broken into pieces
  • 1 ½ cups (90g) mini marshmallows

Instructions

  • Line an 8×8-inch square baking pan with parchment paper and set aside.
  • Place the chocolate, butter, and golden syrup into a large microwave-safe bowl and heat in 30 second intervals, stirring after each one, until melted and smooth.
  • Stir in the digestive biscuits and marshmallows until fully coated.
  • Pour the mixture into the prepared pan and spread out evenly. Refrigerate until set – about 2 – 3 hours, or overnight.
  • Cut into bars and enjoy!
