Chocolate Peanut Butter Blondies – Deliciously fudgy blondies loaded with peanut butter, and topped with a salted peanut chocolate layer!

Guys, I have the ultimate peanut butter treat for you today. You will not miss those peanut butter cups when you try these Chocolate Peanut Butter Blondies – trust me, they are that good! 

We start off with a blondie layer that is so deliciously thick and fudgy, and is loaded with peanut butter flavour. They’re perfect on their own, but today I’m taking them over-the-top good.

I’ve topped these blondies off with a layer of creamy chocolate that is stuffed full of salted peanuts. Because who doesn’t love the combination of sweet and salty? Peanut butter and chocolate?

How to make Chocolate Peanut Butter Blondies

Ingredients you’ll need:

  • unsalted butter
  • light brown sugar
  • caster/granulated sugar
  • large egg + egg yolk
  • smooth peanut butter
  • vanilla extract
  • salt
  • plain/all-purpose flour

For the topping:

  • chocolate chips: milk, dark or semi-sweet.
  • smooth peanut butter
  • salted peanuts

To make these blondies, simply whisk together the butter and sugars until smooth and combined. Add the egg, egg yolk, peanut butter, vanilla, and salt, and whisk until fully combined.

Fold in the flour until completely combined. The mixture will be quite thick.

Spread the batter evenly into an 8×8-inch baking pan lined with parchment paper or foil, and bake for about 25 – 30 minutes, or until the centre is no longer jiggly and a toothpick inserted comes out clean. Do not over-bake.

Allow to cool completely in the pan on a wire rack before topping. You can place the pan in the freezer to speed up cooling time.

For the topping, add the chocolate chips and peanut butter to a microwave-safe bowl. Heat in 30 second intervals, stirring after each one, until melted and smooth. Fold in the chopped peanuts.

Pour the chocolate mixture over the blondies and spread out evenly. Sprinkle with extra chopped peanuts if desired, and allow to set in the fridge before slicing into bars.

NOTE: For best results, I highly recommend using the gram measurements (with a digital scale), rather than the cup measurements.

Cup measurements are simply not accurate enough, and I cannot guarantee the best results if you use them.

Ingredients

For the Blondies

  • 3/4 cup (170g) unsalted butter, melted
  • 1 cup (200g) light brown sugar
  • 1/2 cup (100g) caster/granulated sugar
  • 1 large egg + 1 large egg yolk
  • 1/2 cup (125g) smooth peanut butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 and 1/2 cups (190g) plain/all-purpose flour

For the Topping

  • 1 and 1/2 cups (265g) chocolate chips
  • 1/4 cup (65g) smooth peanut butter
  • 1 cup (125g) salted peanuts, chopped

Instructions

For the Blondies

  1. Preheat the oven to 180C/350F/Gas 4. Line an 8x8-inch baking pan with parchment paper or foil. Set aside.
  2. Whisk together the butter and sugars until smooth and combined. Add the egg, egg yolk, peanut butter, vanilla, and salt, and whisk until smooth and combined. Fold in the flour until completely combined. The mixture will be quite thick.
  3. Spread the batter evenly into the prepared pan, and bake for about 25 - 30 minutes, or until the centre is no longer jiggly and a toothpick inserted comes out clean. Do not over-bake. Allow to cool completely in the pan on a wire rack before topping - about 2 hours.

For the Topping

  1. In a microwave-safe bowl, add the chocolate chips and peanut butter. Heat in 30 second intervals, stirring after each one, until melted and smooth. Fold in the chopped peanuts.
  2. Spread the melted chocolate over the top of the blondies, sprinkle with extra chopped peanuts if desired, and allow to set in the fridge before slicing into bars - about 1 hour.

Notes

Blondies can be stored in an airtight container at room temperature or in the fridge for up to 1 week. They also freeze well for up to 3 months. Thaw overnight before serving.
