This easy dessert consists of a thick and crunchy Oreo crust, a layer of smooth and creamy peanut butter cheesecake, and a generous layer of silky chocolate melted with peanut butter.

These cheesecake bars are an absolute favourite in my house, and I’m sure your family and friends will love them, too!

Ingredients you’ll need

Here’s a list of ingredients you’ll need to make these bars. You can find my recipe card at the bottom of this post for the complete list with their amounts.

For the Crust:

  • Oreo cookies: You’ll need 30, pulsed to crumbs in a food processor.
  • Unsalted butter: Melted.

For the Filling:

  • Cream cheese: At room temperature.
  • Sweetened condensed milk
  • Smooth peanut butter
  • Vanilla extract

For the Topping:

  • Chocolate: You can use milk, dark, or semi-sweet.
  • Smooth peanut butter

How to make Peanut Butter Cheesecake Bars

To make these bars, simply stir together the Oreo crumbs and melted butter until combined, and all the crumbs are moist.

Press the crumbs evenly into an 8×8-inch square baking pan lined with parchment paper.

In a large mixing bowl, whisk together the cream cheese, sweetened condensed milk, peanut butter, and vanilla until smooth and combined.

Pour the mixture over the Oreo crust, and spread out evenly.

Bake for 20 – 25 minutes or until set. Allow to cool completely in the pan on a wire rack.

Add the chocolate and peanut butter to a microwave-safe bowl and heat in 30 second intervals, stirring after each one, until melted and smooth.

Pour over the cheesecake layer and spread out evenly.

Refrigerate until set, then slice into bars.

NOTE: For best results, I highly recommend using the gram measurements (with a digital scale), rather than the cup measurements.

Cup measurements are simply not accurate enough, and I cannot guarantee the best results if you use them.

Ingredients

For the Crust

  • 30 Oreo cookies, pulsed to crumbs in a food processor
  • 1/2 cup (115g) unsalted butter, melted

For the Filling

  • 6-oz (170g) cream cheese, softened
  • 1 cup (14oz/396g) sweetened condensed milk
  • 1/2 cup (125g) smooth peanut butter
  • 1 teaspoon vanilla extract

For the Topping

  • 8-oz (235g) chocolate, coarsely chopped
  • 1/3 cup (85g) smooth peanut butter

Instructions

For the Crust

  1. Preheat the oven to 180C/350F/Gas 4. Line an 8x8-inch square baking pan with parchment paper and set aside.
  2. Stir together the Oreo crumbs and melted butter until combined, and all the crumbs are moist.
  3. Press evenly into the prepared pan.

For the Filling

  1. In a large bowl, whisk together the cream cheese, condensed milk, peanut butter, and vanilla until smooth and combined.
  2. Pour the mixture over the Oreo crust, and spread out evenly.
  3. Bake for 20 - 25 minutes or until set. Allow to cool completely in the pan on a wire rack.

For the Topping

  1. Add the chocolate and peanut butter to a microwave-safe bowl and heat in 30 second intervals, stirring after each one, until melted and smooth.
