For the cookie dough:

  • Plain/all-purpose flour
  • Baking powder
  • Baking soda
  • Salt
  • Unsalted butter
  • Light brown sugar
  • Caster/granulated sugar
  • Large egg
  • Vanilla extract
  • Chocolate chips

For the chocolate fudge centre:

  • Chocolate: You can use milk, dark, or semi-sweet.
  • Sweetened condensed milk

How to make Fudge Stuffed Chocolate Chip Cookie Bars

To make and assemble these bars, simply grab a medium mixing bowl and whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a separate large mixing bowl, whisk together the butter and sugars until combined. Add the egg, and vanilla, and mix until combined.

Add the dry ingredients, and mix until just combined. Fold in the chocolate chips.

Press half of the dough into an 8×8-inch square baking pan lined with parchment paper or foil. Set aside.

For the fudge, add the chocolate into a microwave-safe bowl and heat in 30 second intervals until melted and smooth. Add the condensed milk, and whisk until combined.

Spread the mixture into the prepared pan, and smooth out the top. Place the remaining cookie dough on top and sprinkle with extra chocolate chips.

Bake for 25 – 30 minutes until lightly golden brown. Allow to cool completely in the pan, then refrigerate for at least 2 hours before slicing into bars.

TIP: As soon as you’ve removed the pan from the oven, place it into the freezer for 2 hours. This will speed up the cooling time, and you’ll get neat, clean slices!

The printable recipe card with the full list of ingredients, their measurements, and instructions can be found at the bottom of this post.

  1. Hi, do I need to add baking powder/soda?
No matter what I do I always end up with a horrible fishy taste even if I add just a bit of each.
    Thanks Marsha.

  2. Will popping the tin in the freezer straight from the oven help the fudge to set? The reason I ask is that I’ve been attempting this recipe with a white chocolate fudge center but it melts into the other layers!! I’d love those three really neat, clean layers when I slice it!!

  3. I love chocolate chip cookie bars as is, but stuffed with fudge?? omg a million times more delicious! These are awesome!!
