No-Bake Chocolate Peanut Butter Oat Bars

These No-Bake Chocolate Peanut Butter Oats Bars are made up of three delicious layers.

The top and bottom layer is a chewy, buttery oat mixture, and the middle layer is creamy peanut butter chocolate loaded with salted peanuts.

Ingredients you’ll need

Here’s a list of ingredients you’ll need to make these bars. You can find my recipe card at the bottom of this post for the complete list with their amounts.

  • Unsalted butter
  • Brown sugar
  • Vanilla extract
  • Porridge oats
  • Good quality chocolate (milk, dark, or semi-sweet)
  • Smooth peanut butter
  • Salted peanuts

Simple ingredients for such a quick and easy recipe!

How to make No-Bake Chocolate Peanut Butter Oat Bars

To make these chocolate peanut butter bars, microwave the butter until melted, then stir in the sugar, vanilla, and the oats. Microwave for another minute, then stir again.

Press half of the mixture into the bottom of an 8×8-inch square baking pan lined with parchment paper or foil.

Microwave the chocolate and peanut butter together until melted and smooth. Fold in the salted peanuts. Pour the chocolate over the oats mixture, and spread out evenly.

Top with the remaining oats mixture, and press down gently.

Cover and refrigerate for at least 3 – 4 hours before slicing into bars. You may also refrigerate overnight, too.

NOTE: For best results, I highly recommend using the gram measurements (with a digital scale), rather than the cup measurements.

Cup measurements are simply not accurate enough, and I cannot guarantee the best results if you use them.

How long will these bars last? These bars will keep fresh stored in an airtight container at room temperature or in the fridge for up to 2 weeks.

Can I freeze these bars? Yes! They also freeze well for up to 3 months. Thaw overnight in the fridge before serving.

Ingredients

  • 3/4 cup (170g) unsalted butter
  • 1/2 cup (100g) brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups (300g) porridge oats
  • 1 cup (175g) chocolate (milk, dark, or semi-sweet), coarsely chopped
  • 3/4 cup (190g) smooth peanut butter
  • 1 cup (125g) salted peanuts, chopped

Instructions

  1. Line an 8x8-inch square baking pan with parchment paper, or foil. Set aside.
  2. Add the butter to a microwave-safe bowl and heat until melted. Stir in the sugar and vanilla, then fold in the oats until completely coated. Microwave for 1 minute, then stir.
  3. Press half of the mixture into the bottom of the prepared pan.
  4. In a microwave-safe bowl, add the chocolate and peanut butter. Heat in 30 second intervals, stirring after each one, until melted and smooth. Fold in the chopped peanuts.
  5. Pour the chocolate over the oats mixture, and spread out evenly. Top with the remaining oats mixture, and press down gently.
  6. Cover and refrigerate for a least 3 - 4 hours, or overnight before slicing into bars.

Notes

These bars can be stored in an airtight container at room temperature or in the fridge for up to 2 weeks. They also freeze well for up to 3 months. Thaw overnight before serving.

These are outstanding! I know most people love no-bake treats for the convenience, but I love them for the guaranteed chewiness factor. You can't over bake what you don't bake ;)
