If you’re a fan of chocolate truffles, then you are gonna love this recipe.

These Cinnamon Brownie Bites are basically cinnamon-spiced brownie truffles, and they are SO good!

They’re rich and fudgy, perfectly spiced with cinnamon, ginger, and nutmeg, and they are sealed in a thin layer of chocolate.

Dust with a little icing sugar or your favourite toppings, and you have yourself the most perfect indulgent treats suitable for gift-giving.

Cinnamon Brownie Bites

Ingredients you’ll need

Here’s a list of ingredients you’ll need to make these bites. You can find my recipe card at the bottom of this post for the complete list with their amounts.

For the brownies:

  • Unsalted butter
  • Granulated sugar
  • Cocoa powder: I love and use Dr. Oetker Fine Dark Cocoa Powder.
  • Salt
  • Large eggs: You’ll need 2, straight from the fridge.
  • Vanilla extract
  • Plain/all-purpose flour: You only need 1/2 cup (60g) of flour. Using a small amount of flour is what makes for extra fudgy brownies.
  • Ground cinnamon, ginger, and nutmeg
  • Chocolate chips: You can use milk, dark, or semi-sweet.

For the chocolate coating:

  • Chocolate: Milk, dark, or semi-sweet.
  • Vegetable oil: For thinning out the chocolate. You can also use coconut oil.

How to make Cinnamon Brownie Bites

To make these brownie bites, simply place the butter, sugar, cocoa powder, and salt into a large microwave-safe bowl, and heat for 30 seconds.

Stir well, then continue heating in 30 second intervals (stirring after each one) until combined and very warm/hot to the touch.

Add the eggs and vanilla, and mix well until combined.

Fold in the flour and spices until fully combined, then gently fold in the chocolate chips.

Be sure not to let them ALL melt into the warm batter.

Pour the batter into an 8×8-inch square baking pan lined with parchment paper or foil.

Bake for 30 – 35 minutes, or until the centre is no longer jiggly and a toothpick inserted comes out almost clean with a few moist crumbs.

Allow to cool completely in the pan on a wire rack.

TIP: To speed up the cooling time, pop the pan in the freezer for 1 hour. It’ll be completely cool and firm enough to cut into bite-sized squares.

For the chocolate coating, add the chocolate and vegetable oil to a microwave-safe bowl.

Heat in 30 second intervals, stirring after each one, until melted and smooth.

Cut the brownie into bite-sized pieces, and dip each one into the melted chocolate.

Place onto a baking tray lined with parchment paper, and allow to set completely at room temperature or in the fridge before serving.

For looks, I dusted my brownie bites with icing/powdered sugar, but you can top them with whatever you fancy!

NOTE: For best results, I highly recommend using the gram measurements (with a digital scale), rather than the cup measurements.

Cup measurements are simply not accurate enough, and I cannot guarantee the best results if you use them.

Ingredients

For the Brownies

  • 1 and 1/4 sticks (140g) unsalted butter
  • 1 and 1/2 cups (300g) granulated sugar
  • 3/4 cup (75g) cocoa powder
  • 1/4 teaspoon salt
  • 2 large eggs, cold
  • 1 teaspoon vanilla extract
  • 1/2 cup (60g) plain/all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup (90g) chocolate chips

For the Coating

  • 12-oz (350g) chocolate, coarsely chopped
  • 1 and 1/2 tablespoons vegetable oil

Instructions

  1. Preheat the oven to 180C/350F/Gas 4. Line an 8x8-inch square baking pan with foil or parchment paper, and set aside.
  2. Place the butter, sugar, cocoa powder, and salt into a microwave-safe bowl, and heat for 30 seconds. Stir well, then continue heating in 30 second intervals (stirring after each one) until combined and very warm/hot to the touch.

Hi, can we make them eggless also? What can we add instead of eggs?

You can use 1/4 cup (63g) unsweetened applesauce for each egg used. Don't worry, you won't taste the apple :)
