No-Bake Peanut Butter Cookies – These cookies are soft, creamy, loaded with peanut butter flavour, no-bake, and only require 4 simple ingredients to make!

Guys, I have the most easiest cookie recipe for you today, and you are gonna LOVE it.

These cookies require no baking and only 4 simple ingredients. Yup. And they are so good!

Much like my other no-bake recipes, these cookies are packed full of flavour, and have an irresistible texture.

They are soft and creamy, with an added chewiness from the oats.

Ingredients you’ll need

Here’s a list of ingredients you’ll need to make these cookies. You can find my recipe card at the bottom of this post for the complete list with their amounts.

  • smooth peanut butter
  • porridge oats
  • icing/powdered sugar
  • vanilla extract

Simple, right?

How to make No-Bake Peanut Butter Cookies

To make these no-bake cookies, simply combine all of the ingredients together in a large bowl. Shape the mixture into circles 2-inch (5cm) wide, 1/2-inch (1cm) thick.

TIP: I pressed my mixture into a cookie cutter for perfectly shaped circles.

Place the cookies onto a baking tray lined with parchment paper and store in the freezer until firm – about 30 minutes.

I drizzled my cookies with a little melted chocolate, but that is totally optional.

These cookies should be kept refrigerated in an airtight container. They will become too soft left at room temperature. You can also freeze them for up to 1 month, but they won’t last that long. 😉

No-Bake Peanut Butter Cookies

These cookies are soft, creamy, loaded with peanut butter flavour, no-bake, and only require 4 simple ingredients to make!

Yields: 12 cookies

Ingredients

  • 1 cup (250g) smooth peanut butter
  • 1 cup (100g) porridge oats
  • ¾ cup (90g) icing/powdered sugar
  • 2 teaspoons vanilla extract

Instructions

  • In a large bowl, stir together the peanut butter, oats, icing sugar, and vanilla until completely combined. You may need to use your hands towards the end to gather everything together.
  • Shape the mixture into 2-inch (5cm) wide, 1/2-inch (1cm) thick circles. You should get about 10 -12 cookies. I pressed mine into a cookie cutter to get perfect circles.
  • Carefully place the cookies onto a baking tray lined with parchment paper, or silicone mat, and place in the freezer until firm – about 20 – 30 minutes.
  • Drizzle the cookies with melted chocolate, if desired.

Recipe Notes

Cookies should be kept refrigerated in an airtight container. They can also be frozen for up to 1 month. Thaw overnight in the fridge.
