These No-Bake Almond Butter Breakfast Bars are super thick and chewy, loaded with almond butter flavour, and generously drizzled with dark chocolate. 

They’re filling, high in protein and fibre, and make the perfect treats for breakfast.

Ingredients you’ll need

Here’s a list of ingredients you’ll need to make these bars. You can find my recipe card at the bottom of this post for the complete list with their amounts.

  • Almond butter
  • Coconut oil
  • Honey, maple syrup, or agave
  • Porridge oats
  • Rice Krispies
  • Chopped nuts: I used a mix of peanuts, almonds, and walnuts.
  • Ground cinnamon: Optional, but I highly recommend!
  • Salt

How to make No-Bake Almond Butter Breakfast Bars

To make these almond butter breakfast bars, simply add the almond butter, coconut oil, and honey to a microwave-safe bowl, and heat until melted.

Add the oats, Rice Krispies, chopped nuts, cinnamon, and salt, and mix in until fully combined.

Press the mixture firmly into an 8×8-inch square baking tray lined with parchment paper or foil, cover, and freeze for 1 – 2 hours before slicing into bars.

If desired, drizzle the bars with a generous amount of dark chocolate!

Can I use peanut butter instead of almond butter? Yes you can! Use the same amount as stated.

What else can I add to these granola bars? You can replace the chopped nuts with seeds, dried fruit, or even mini chocolate chips.

How long do these granola bars last? These bars can be stored in an airtight container at room temperature or in the fridge for up to 2 weeks. They also freeze well for up to 3 months.

Ingredients

  • ½ cup (125g) almond butter
  • ¾ cup (150g) coconut oil
  • 6 tablespoons (127g) honey, maple syrup, or agave
  • 2 ¾ cups (250g) porridge oats
  • 2 cups (50g) Rice Krispies
  • ½ cup (65g) chopped nuts
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  • Line an 8×8-inch square baking pan with parchment paper or foil. Set aside
  • Add the almond butter, coconut oil, and honey into a microwave-safe bowl, and heat until melted.
  • Add the oats, Rice Krispies, nuts, salt, and cinnamon, and mix until combined.
  • Press the mixture firmly into the prepared pan. Cover and freeze before slicing into bars – about 1 – 2 hours. Drizzle with dark chocolate if desired.
